Green Eggs and Ham at Hernandez Child Care

Claudia Hernandez, owner of Hernandez Family Child Care in California, made many new healthy changes regarding nutrition and physical activity in her program. While participating in the National Early Care and Education Learning Collaborative (ECELC) program in 2016, Claudia realized how easy it was to incorporate best practices into her program’s procedures. Claudia made notable changes to her menu by serving zoodles (zucchini noodles), cauliflower rice and spa water (fruit and vegetable infused water). Additionally, she combines nutrition into other lessons by creating cooking experiences for the kids. The most recent experience was making green eggs and ham after reading Green Eggs and Ham by Dr. Seuss.

Claudia also worked on improving and maximizing her indoor space to promote more movement and physical activity indoors as she does not have outdoor space for play. In order to promote more structured and unstructured play, Claudia periodically makes new obstacle courses throughout her home and incorporates movement during transition times. “My goal is promoting a healthy and moving lifestyle. By participating in this program, I learned not only how to promote healthy eating, but the importance of exercising and especially how to keep parents informed about simple habits that impact our health. My space is very small but thanks to this program I have been able to adapt it to keep the children in activities that promote physical movements to maintain a healthier lifestyle.”

Claudia adds, “We have also been able to show the children how to maintain a small garden where they grow their vegetables. And I have learned how to incorporate healthy lesson plans into my conversations with the children during lunch time. ”
